This table was compiled by calculating the total number of 5 toques, 4 toques and 3 toques ratings attributed to restaurants in each city by the Gault & Millau Guide in 2012. The toque rating system is similar to the Michelin stars. Gault & Millau gives a score to each restaurant on a scale from 1 to 20. A score 19.5/20 is worth 5 toques. 19/20 is awarded 4 toques. 17/20 and 18/20 are each worth 3 toques, 15/20 and 16/20 each get 2 toques, while 13/20 and 14/20 are worth 1 toque. In English-speaking countries Gault & Millau is known as Gayot and uses the same rating system, though slightly different criteria, which falsifies the comparison.
Restaurants in the suburbs and outskirt were taken in consideration too, limiting the radius from the city centre to 20 km for big cities (from 1 million inhabitants) and 10 km for smaller cities and towns.
Top 25 cities by total number of toques (2012 ranking)
Only the following countries were tested by Gault & Millau : Austria, Belgium, Croatia, the Czech Republic, France, Germany, Hungary, Luxembourg, the Netherlands, Switzerland, and the United Kingdom.
