Well you might as well forget anything less than 5%.So the main components of both your mother's and yours are Central Asia (Turkic tribes), West Asia which is basically Turkey and possibly Northern Iraq and Syria and Greek heritage possibly from Greek descent ancestors that became Muslims. Ottoman Empire kept pretty good tax records so you might be able to trace your ancestry pretty easily.
the greek you get doesn't have to be greek, could also just be overlapping ancestry that is both present in greece and in turkey but just gets labeled as greek and south italian by myheritage.
the central asian china and vietnam is probably from turkic tribes. iberia also again probably overlapping farmer ancestry not really iberian. ashkenazi jewish also with high probability not really ashkenazi jewish but more likely other levantine or also anatolian ancestry that is also present in ashkenazi jews.
